On average, you will lose around 50% weight when filleted.
We recommend that our fresh fish is eaten straight away, but it will keep in your refrigerator for up to 3 days.
If you wish to freeze, do on day of delivery and consume within 3 months.

The King of the Flat Fish.
Turbot’s texture is similar to halibut, but it has a slightly more pronounced ‘fishy’ taste, so requires little to enhance the flavour.
It’s also a chef’s dream, retaining plenty of moisture during cooking which means it doesn’t readily dry out.
A Turbot will yield four fillets per fish.
