Description
John Dory is a delicious fish with delicate white flesh and a firm, flaky texture.
It has a mild, slightly sweet flavour, and can be served sautéed, baked, steamed, poached, or even coated in breadcrumbs and fried.
John Dory are often called ‘St Peter’s fish’ since St Peter is alleged to be the origin of the distinctive dark ‘thumbprint’ on its side.
A John Dory will yield two fillets per fish.
